k.u.k. Meaning

Responsibility & Sustainability

The regional, reliable origin of our food and products is really important to us ( “k.u.k. Corporate Responsibility”). Everything is self-made and nothing is “convenience cooked”! With our following suppliers we provide this quality together within our daily services for you:

Trumer Private Beer Brewery J. Sigl

“For the public welfare” – in this meaning, you can toast each other from the bottom of your heart with our popular domestic, family owned brewery. Since the beginning of the k.u.k. Hofbeisl in 1985 we have more than just a business connection with this supplier and it proves in many ways that even among friends we can do good business.

Since 2016 the Trumer private brewery provides a “balance sheet for public welfare”. This includes, among other things, extensive audits concerning to ecological sustainability, social justice and transparency. The balance sheet for public welfare confirms the conviction for responsible action and strengthens the thinking for future generations.

The private brewery is submitted to the highest quality standards, is “slowbrewing certified” and member of “culture brewers”, an association of eight successful Austrian family owned traditional breweries, co-initiated by Josef Sigl VII.

Ausseerland Fishery

The Ausseerland is not only known for the beautiful landscape and the lakes embedded in the mountains, but also for the Ausseer char. The importance of this fish can be traced back over the centuries and was already established in the courts of the nobility in the emperor's time.

The Ausseerland Fishery exists since 2018 and the tradition of its predecessors is still cultivated and continued today in the fresh and clean water from the Ausseerland, using the most modern methods.

In the Headquarters in Kainisch, the fish are processed and refined in the completely renovated facility, following highest quality standards and hygiene regulations.

More than 20 employees care about the well-being of the fish and the high quality of the products. There are specialists for every area, from the extraction of the eggs to the highly refined food.

The method of wild catch plays a prominent role. Two professional fishermen catch out of the lakes Grundlsee, Toplitzsee, Pass Stein Reservoir and out of the in the Upper Austrian part of the Salzkammergut located lake Hallstätter See Reinanken, chars, pikes and trouts.

Maislinger Bakery

“Bread is a force that creates life…”

The Bad Ischl master baker Ernst Maislinger not only lives his philosophy, but he also feels it deeply in his body and soul. And he puts it into his “bioenergetic bread”, which is "alife"and stays fresh for a long time. His bread is more than just food.

In his own mill the whole grain is grinded. The Maislinger bakery exclusively processes natural raw materials, if possible from the region, artificial aids and ready-made mixtures are completely avoided.

Bread and pastries are not made with salt but with natural, alpine salt water from the “Bad Ischl Marie Louisen Spring”.

Butcher Hauer

The butcher Hauer in Lochena am See has been guaranteeing top-class meat specialties for over 50 years. In own farming e. g. Mangalica pigs are raised, beef and pork are delivered from regional farmers (more than 50% organic farmers in Lochen, grassland feeding instead of silage, oxes & calves instead of mast bulls with a corresponding impact on fat and other meat quality) and in own slaughter, slaughtered with transport routes between 5 and 15 km.

Mr. Josef Hauer's father started the business 60 years ago, the legendary and popular “Hauer Bratwurst” is still made according to his recipe.

At the k.u.k. Hofbeisl & Hofwirt Hauer’s “Sacher Saucages” are very popular, which are Frankfurter saucages “spiced up” according to his own recipe with chili granulate and a little vanilla.

Many Bad Ischl and Salzkammergut residents know Mr. Hauer personally from his continuously well-attended stand at the Bad Ischl weekly market, which takes place every friday in the city center. He can be visited there for personal information at any time.

Atelier Franz

In 2019, in the Pfarrgasse in Bad Ischl, right opposite the famous Zauner pastry shop the ATELIER FRANZ opened as a start-up-company. A place of art, fashion and good conversations lead by Ibo and Chris.

In the focus of their work stand sustainability, regionality and quality. This means, that customers can understand where their products come from. Zero waste productsor organic qualities, preferably “made in Bad Ischl”, are their strengths.

Ibo is known far beyond Bad Ischl for having a special feeling to create the right garment for his customers. His credo also includes: Cooperations with regional companies according to the motto “build synergies and get the most out of a common topic”.

Our popular, practical, unique and stylish working skirts of our teams in the k.u.k. Hofbeisl and at the k.u.k. umbrella bar both in terms of creation and production/tailoring, were created by the ATELIER FRANZ in Bad Ischl.

Wood-fired bread from the Grabenmühle

It's really very popular and proven in our homeland, the original, handmade wood-fired bread from “Grabenmüller” in St. Wolfgang also known as Peter and Agnes Ellmauer.

The grain used is 100% rye, which also pleases many allergic customers. Because of its very special crust the bread is extremely durable and tastes good and extremely delicious if toasted.

Salzkontor

The organic and vegan natural salt specialties from the Salzkammergut are made by hand, with love and care in Salzkontor's own factory in St. Wolfgang.

The natural salt comes from the salt mine in Altaussee, is over 250 million years old and is among other things refined with organic herbs and spices.

Seegut Eisl

The Wolfgangsee Sheep Cheeseor “Aberseer Sheep Cheese” is well-known, popular and well-established in the Salzkammergut. Of course, it can't be missed in the k.u.k. Hofbeisl & Hofwirt either.

The production of the sheep's milk specialties at Seegut Eisl takes place in the farm cheese dairy, which was built in 1992. It is integrated into the over 500 year old farmhouse, also known as the “Stoffengut”. It's situated on the Wolfgangsee Peninsula in Abersee.

Twice a week the organic sheep's milk is processed into cream cheese and yogurt. Final processing and delivery of the products takes place once a week.

The cream cheese is the classic product among Eisl's specials. Its special feature is its fine, creamy mild but full-bodied cream cheese taste.

Biohof Martin and Tanja Tragler

The Tragler family runs their organic farm since 1991. They provide us with their organic free range eggs.

On 12 hectares of meadows and pastures around 1.800 laying hens have enough space to run around. They are exclusively fed with organic food.

Fresh organic wheat seedlings provide them daily with high-quality protein, lots of vitamins and enzymes. They also get corn, sunflower cake, lucerne green flour and soybeans. The grain is purchased from Austrian organic farmers, in a way like it is prescribed by official organic guidelines.

For more info about the organic farm please visit the “company's website”.

Aumayr Fruits

The Aumayr family business in Eferding acts as a wholesaler in the 3rd generation and sells fruits, vegetables, potatoes, onions, salads and a variety of agricultural products.
